I've got got myself a new culinary staple - I am in love with it and vow to cook it regularly for the rest of my days. I came across it I when I got a recipe bag from www.jessicasrecipebag.co.uk - for £45 (for your first family bag), Londoner's can have the main ingredients for four meals delivered to their door on a Monday night. It was such a treat when the bag arrived - the produce was of a really high standard. And my bag included a recipe card for a spicy chicken and spelt casserole recipe (pictured) which I set about making. It was a really nice supper that the whole family enjoyed but there was one part of it that I have cooked again and again since. It was the spicy spelt, and I have had it since with baked fish, fried eggs, sausages and more. Yes, spelt has nudged potatoes, rice and pasta out of the way for now.


HERE'S HOW TO MAKE THIS LIFE-CHANGING RECIPE
Finely chop a small onion. In a large heavy based casserole or frying pan with a lid heat 1 tbsp of olive oil. Add the onion, 1 crushed garlic clove and 1 tsp of mixed spice (I used Firecracker Chilli Secret Spices from www.mysecretkitchen.co.uk which is just gorgeous). Fry until soft then stir in the spelt ( I used Organic Pearled Spelt from www.sharphampark.com, which is also gorgeouus). Pour over 700ml of stock and bring to the boil, reduce the heat, cover and simmer for 25 minutes. And serve with just about anything!
