Forget school dinner disasters, rice pudding is back on the menu
In terms of Great British comfort food, nothing beats the humble rice pudding. We havent always seen eye to eye, me and rice pudding. Some of my first memories of primary school are slowly pushing the remaining pearls of rice around my very small bowl. I hated its sloppy consistency and couldnt stomach the obligatory puddle of sticky strawberry jam.
I cant recall what changed my mind but now, decades later, I cant get enough of the stuff. So seeing as our skies are becoming increasingly steely, rice pudding seemed the ideal treat to combat a wintery Wednesday. Youll find most rice pudding recipes take a couple of hours to cook but dont be discouraged, the oven does most of the work for you and this classic vanilla recipes easy as pie.
I was worried the nutmeg would get lost in the pillows of pudding rice, but just a few grates (as well as a whole vanilla pod) are enough to subtly spice the whole dish. Mine did have a tendency to dry out quite quickly so make sure youre on hand to feed it with glugs of milk and cream. The end result wasnt anything like the slop you get at school. Instead, each mouthful was rich with Christmassy spice and double cream. If youre making this pudding for a yuletide gathering, try adding a cinnamon stick (or a liberal pinch of the powdered spice) as well as the nutmeg and vanilla.
