I try to eat as much asparagus as possible when it's in season - so I've tried a fair few asparagus recipes, but I think I've hit my ultimate. It's an asparagus risotto recipe by ITV's This Morning chef Marcus Bean. Marcus has taken care of the textures so well here - and risotto is all about textures. You need to avoid the slop factor. He adds crispy fried onion at the very end. And there are chives, and just a splash of cream. Check out the recipe in the video below - there's lovely tinkly music too!
