Filled with crispy chicken, roasted veg and lashings of houmous
Wraps rarely make an appearance in my lunchbox. Most have the remarkable ability of dribbling down the hands, arms and (most annoyingly) clothes of the poor souls trying to devour them a tendency which never ceases to irk me. The squishy softness of bread, sandwiching its contents with such ease, simply makes for a safer option.
I tasted a wrap last week, however, which inspired a serious rethink a grilled halloumi and roasted vegetable variety, dipped in a pool of sweet chilli sauce and layered with dollops of pesto and houmous. Served on a wooden board and toasted until crisp, I escaped streak-free and tremendously satisfied.
I wanted to recreate its delicious blend of Mediterranean flavours back at home, but swapped the halloumi for chicken to make for a more substantial meal. Perfect for al fresco suppers and lunchboxes alike, heres hoping this recipe converts all you stalwart sandwich-lovers! (For a veggie-friendly option, substitute the chicken for slices of grilled halloumi and some raw peppers for added bite).
Serves 4
You will need
1 courgette, cut into half-moons
1 red pepper, sliced
1 red onion, sliced
2 cloves garlic, diced
1 tub of houmous (I used one spiked with garlic and roasted red pepper for an extra kick)
2 chicken breasts, diced
Pinch of paprika
4 wholemeal wraps
Few handfuls of lettuce, torn
Salt
Pepper
1tbsp olive oil
1. Fry your courgette, red pepper, onion and garlic in olive oil on a medium heat until brown, probably 6-8 minutes. Season and set aside.
2. Sprinkle your chicken pieces with a pinch of paprika and fry in the same pan until brown, adding a drop more oil if necessary.
3. Warm your wraps in the oven for 8 minutes or in the microwave for 20 seconds.
4. Now youre ready to assemble! Take one wrap and spread with a generous dessert spoon of houmous (dont skimp, the more you add the better). Add a handful of torn lettuce leaves, a few pieces of crispy chicken and finally the roasted vegetables. Fold the edges of your wrap in first and, in one swift movement, roll it up.
