Ingredients

  • Spray oil
  • 2 x 30g/1oz soft tortillas
  • 4 ripe cherry tomatoes, halved
  • ½ yellow (bell) pepper, deseeded and chopped
  • 2 spring onions, chopped
  • 30g/1oz baby salad leaves
  • 125g/4½oz cooked skinned chicken breast, diced
  • 2 tbsp low-fat guacamole
  • 2 tbsp chopped fresh coriander

FOR ORANGE DRESSING

  • 1 tbsp oil-free vinaigrette dressing
  • Grated zest and juice of ½ orange
  • ½ red chilli, deseeded and finely diced

Method

  1. Preheat the oven to 200°C/400°F/Gas mark 6.
  2. Lightly spray two Yorkshire-pudding moulds or tartlet tins with oil. Press the tortillas down into the moulds to make a basket shape and cook in the oven for 8–10 minutes until crisp and golden. Check that they do not over-brown. Remove from the oven and leave to cool.
  3. Blend the dressing ingredients together in a small bowl or shake them in a screwtop jar until well combined.
  4. Mix the tomatoes, yellow pepper, spring onions, salad leaves and chicken together in another bowl, then add the dressing and toss gently until everything is lightly dressed.
  5. Divide the chicken salad mixture between the tortilla baskets and top each one with a spoonful of guacamole and some chopped coriander.
