  • 175g self-raising flour, sieved
  • 1 tsp baking powder
  • 175g soft brown sugar
  • 175g unsalted butter, melted
  • 3 ripe bananas, peeled and mashed
  • 3 eggs, beaten

For the topping

  • 200g soft cream cheese
  • 2 tbsp icing sugar, sieved
  • finely shredded orange zest and poppy seeds, to decorate

Method

  1. Preheat the oven to 180°C (350°F, gas 4). Grease and line a 900g loaf tin with greaseproof paper. Place the self-raising flour in a large bowl and add the baking powder, brown sugar, butter, bananas and eggs.
  2. Beat with a wooden spoon to mix well and pour into the prepared loaf tin. Bake for 1hr until a skewer inserted into the centre comes out clean.
  3. Cool in the tin for 5 mins and then transfer to a wire rack to cool completely.
  4. Make the topping by mixing together the cheese and icing sugar until smooth. Spread on top of the loaf and chill until ready to serve. Decorate with the shredded orange zest and poppy seeds.
