450g/1Ib carrots, topped and scrubbed, or peeled if you prefer, sliced in half lengthways
1-2tbsp olive oil
pinch of sugar

Preheat oven to gas mark 6/200°C (180°C in a fan oven). Add carrots to a steamer and sit over a pan of boiling water. Cover and simmer for about 10 mins, then remove and put to one side to cool.
Add carrots to a roasting tin, toss with olive oil and sugar and spread out in a single layer. Put in oven to roast for about 20 mins until golden. Transfer to a serving dish.
