Healthy recipes: warm squash and halloumi salad

Our warm salad recipe will help you hit your five a day target oh-so-easily - and it tastes amazing!

Serves 4

  • Put 1-2 tsp freshly chopped thyme in a bowl with a good pinch of chilli flakes, a pinch of salt and black pepper and 2-3 tbsp olive oil into a bowl. Add 1 tbsp hot water. Stir well.
  • Cut one small kabocha squash into wedges. Put in a roasting tin lined with baking parchment (this helps to stop the veg from sticking to the base of the pan).
  • Peel 2 large carrots and parsnips then cut each lengthways and add to the tin. Quarter 2 small red onions and add that, too. Brush everything with the oil mixture, then drizzle over any extra remaining in the bowl. Roast at 200°C/180°C/gas mark 6 for 30-40 minutes.
  • Chop a large handful of kale into pieces and sprinkle over the roasted veg. Drizzle with a little oil and continue to roast for 5-10 minutes more.
  • Mix together 1 tsp harissa and 1tbsp olive oil and season well. Slice up a 200g pack halloumi then brush a little of this mixture over the top. Heat a griddle pan until hot and fry each slice until golden. Arrange the roasted vegetables on a large platter and top with the halloumi. Add a big squeeze of lemon juice to the harissa dressing and drizzle over the top. Serve with extra lemon wedges.
  • Vary the recipe

    Use reduced-fat feta and sprinkle with toasted pumpkin seeds.
