Healthy dinners: sunny-side-up spinach omelette

A protein-rich healthy supper recipe that will keep you full for hours and makes a wonderfully healthy lunch or supper. It's also one of the healthiest ways to start the day.

Serves 1

  • Melt a very small knob of butter in a pan and cook a chopped spring onion gently for around 5 minutes to soften. Add a large handful of washed spinach and allow to wilt down. Season well.
  • Stir in 1 beaten, seasoned egg and swirl around the pan. Leaving a space in the middle. Then, pour 1 whole egg into the middle. Cover with a lid and allow the white to finish cooking. Serve.
  • Vary the healthy omelette recipe

    Add a pinch of chilli flakes to the beaten egg for a kick of heat and throw in a handful of halved cherry tomatoes in place of (or as well as) the spring onion. Complete the recipe.
