Serves 8

  • Preheat the oven to 190°C/170°C/gas mark 5. Line a 450g loaf tin with greaseproof paper or a loaf tin liner.
  • In a jug, whisk together 125g natural yogurt, 2 medium eggs and 2 tbsp honey.
  • Put 75g each self-raising flour and wholemeal self-raising flour into a large bowl. Mash 2 small bananas (around 130g) in a separate bowl, then stir in ½ grated apple and 2 tbsp sultanas.
  • Put this mushy mixture into the bowl with the dry ingredients then pour on the egg mixture. Stir everything together quickly then spoon into the loaf tin, sprinkle with 1 tbsp oats and bake for 50 minutes.  
  • Vary the healthy cake recipe

    Try adding the grated zest of ½ orange and swap the sultanas for 40g finely chopped figs or another dried fruit of your choice.
