Veggie recipe from a fab veggie restaurant

Vegetarian fast food with a difference

by Carla Griscti

If like me you love vegetarian dishes but seem to lack somewhat in inspiration when it comes to rustling up a meat-free feast, then a little helping hand to get the creative juices flowing never goes amiss. Most of my culinary creations are generally made up of sizzling bacon, spicy chorizo or pieces of succulent chicken breast, but there are times when your taste buds just crave some good old vegetables.

For me a veggie dish has to be bursting with flavour, if there’s no meat then there shouldn’t be any compromise on taste, so the more ingredients the better! This is exactly what London vegetarian restaurant 'tibits' has created; a delicious fusion of vegetarian world cuisine.

A buffet-style concept offering a selection of fresh and healthy meat-free dishes, bursting with a multitude of fabulous flavours, titbits is inspired by cuisines from all over the world, ranging from spiced falafel to aromatic Thai curry. This is a fast food joint with a difference. Help yourself to zesty fruity salads, sumptuous Moroccan stews and devilish creamy cauliflower. Your meal is charged by the weight on your plate so you can take as much or as little as you like.

The décor is stylish and contemporary with soft ambient lighting, all adding to the pleasant and relaxed atmosphere. Tucked away in Heddon Street's quaint courtyard, just moments from Piccadilly Circus, 'tibits' is the perfect place to grab a quick bite for lunch, or a great evening haunt to relax and unwind in with a piled plate of tasty food and a refreshing glass of wine.

After my visit I really was inspired to try out some adventurous vegetarian cooking, so I was more than happy to delve into the 'tibits' new cookbook ‘tibits at home’. With a selection of light salads, fruity punches and delicious pasta dishes, there is something to suit all tastes. As a lover of Italian food, I tried my hand at the spinach, tomato and feta lasagne. A simple-to-make and healthy version of an Italian classic, using soy milk for the béchamel. It adds a much sweeter taste that contrasts with the feta perfectly.
