MAKES: 12-15

Ingredients
75g soft butter, plus extra for greasing
75g dark muscovado sugar
1 medium egg, beaten
50g golden syrup
300g self-raising flour
1tsp mixed spice

For icing
1 medium egg white
225g icing sugar, sifted
Squeeze of lemon juice
Caster sugar, for sprinkling

1 Heat the oven to 180°C (160°C fan oven) gas mark 4. Lightly grease two large baking sheets. Put the butter and sugar in a food processor and blitz until blended. Add the egg, golden syrup, flour and spice. Blitz until the mixture comes together in a ball.

2 Lightly knead the dough until smooth, then divide into two pieces and flatten into discs. Wrap in clingfilm and chill for 20 minutes.

3 Roll out the dough on a lightly floured surface until it is 3mm thick. Stamp out snowflake or tree shapes and arrange on the baking sheets. Make a hole at the top of each biscuit to thread with ribbon once iced. Bake for 10-12 minutes until golden. Leave on the sheets for a few minutes to firm before transferring to a wire rack to cool.

4 To make the icing, blend the egg white with 3 tablespoons icing sugar. Add the lemon juice and beat in the rest of the icing sugar until it forms stiff peaks. Leftover icing will keep in the fridge for up to a week, covered with damp kitchen towel.

5 When the biscuits are cold, fit a piping bag with a 4-5mm nozzle and fill with some of the icing. Decorate the biscuits. While the icing is still soft, sprinkle with caster sugar and shake off the excess. Set the biscuits aside overnight until the icing has dried. Thread ribbon through the holes and hang on your tree.
