Once the petals have fallen from the bloom, protecting the seeds from the birds is a priority if you want to harvest them.

Tie a net or muslin bag over the flowerhead, either in situ on the plant or after you’ve cut the flowerhead away and hung it upside down to dry in a cool place.

Either way, the bag will collect seeds as they drop away from the plant ready for you to store to sow next year, to eat or to feed the birds over the winter.
